Ume Niou
Since plum flowers blossom just before the start of spring, red and white plum patterns are seen as an auspicious symbol in Japan.
This confection tries to recreate that using a layer of red yokan (white bean paste colored red) and a layer of murasame (steamed rice flower).
Wherever you cut it, you will see both red and white plum blossoms to welcome the coming of spring.
